"When the kiddos were little we used to have a "Ten Minute Tidy" every night before they went to bed. We'd set the timer on the microwave for 10 minutes, and we'd all pitch in and clean up around the house. You can get a LOT done in 10 minutes!
I've been thinking about that a bit lately and wondering how much I could get done in 10 minutes if I focused on meal planning & prep.
I decided to try it out and this is what I accomplished - In just 1 session!
* boiled a dozen eggs
* chopped bell peppers for fajitas later in the week
* browned 2 lbs ground turkey with taco seasoning for sweet potato nachos
* chopped carrots & cucumber for salads
*sprinkled chicken tenderloins with seasoning and baked them in the oven for lunch salads (took 14 minutes)
I think sometimes we look at meal prep as something that has to take a whole Sunday afternoon and so we don't do it. But what if we committed to 10-20 minutes every night before bed? What would the next day look like?" -Robin

Interested in that sweet potato nacho recipe? Here it is:
1 package lean ground turkey
Avocado or single serving guacamole cups
Preheat oven to 350 degrees.
Slice a sweet potato into rounds. Not as thin as chips, but not real thick. If you want to prep several meals ahead, prepare several sweet potatoes at once. This dish reheats nicely.
Lay them in a single layer on a cookie sheet. Drizzle a little olive oil over them and sprinkle cumin & salt & pepper.
Bake for about 20-25 minutes.
While they're baking, begin to brown your package of ground turkey. Add taco seasoning.
To serve, plate the sweet potato "Nachos", top with a serving of taco meat, and a handful or 2 of mixed greens.
Add desired toppings. (If using avocado, a reasonable serving is 1/4 avocado or 1 mini guac cup)
